Hot Use
To cook dishes completely (meat, fish, vegetables), place the plate or tile over a flame or in a preheated oven at 250°C for 20-30 minutes. Then remove it from the oven and place the food to be cooked on top, returning it to the heat for a few minutes if it is not yet cooked. Once cooking is complete, serve directly on the plate at the table, placed on a trivet. Do not add salt until cooking is complete, to avoid excessive saltiness.

Cold Use
Cool in a blast chiller for 6 to 8 hours at -25/-30°C (or alternatively in a freezer for at least 24 hours). For fish, the dish must be cooled together with the plate. The great advantage over ice is that the food does not stick.
