Marigold (Calendula officinalis L) is an annual herbaceous plant of the Compositae family, cultivated for ornamental and medicinal purposes in almost all countries in the Mediterranean area.
It is a rustic, spontaneous species that adapts to different environments and terrains and can be grown up to a height of 600 meters, in areas with good exposure.
Also known as "fiorrancio", it has stems that can reach 30 - 60 cm in height with acute or rounded leaves arranged in a rosette.
Marigold produces yellow-orange flowers collected in 3 - 5 centimeter flower heads which constitute the source of the substance used in phytotherapeutic preparations.
Each plant produces from 20 to 50 inflorescences which must be harvested at the beginning of flowering.
The resulting smell is delicate, pungent and balsamic with a bitter and slightly salty flavour.
